A great way to get staff and volunteers involved is to create incentive programs that encourage them to go green.  Give them rewards, which could be anything from a simple shoutout at the next staff or board meeting, to an extra day off, for taking environmental initiatives themselves, or identifying ways the organisation could improve its environmental sustainability.
